The fat content is highest during summer, but it differs during the two months between July and September. While the fat content is high, there is a risk to become too soft. The amount of resources are maintained higher than Russian.

Scientific name: Pleurogrammus Monopterygius
They can be found in areas ranging from Kuril Islands to off the coast of Kamchatka Peninsula, as well as from Aleutian Islands to the coastal areas of the Gulf of Alaska. This area belongs to the circum-pacific orogenic zone, and they are caught in shallow coastal waters. The largest recorded specimen weighed 2kg, with a total length of 56.5cm. They live up to approximately 15 years. In recent years, the median age of the biomass is reported to be between 7 and 8 years, and they are estimated to weigh between 600 to 1000 grams.

Characteristics
Most of the Pacific Ocean Perch brought into Japan are produced in Alaska. Out of the three sea areas produced in the US, the fish caught at the Aleutian Islands is characterized by high fat content and redness of the skin. All of them are being dressed, applied antioxidants and quickly frozen on the vessel.

Scientific name: Sebastes Alutus
Just as Atka Mackerels, they can be found in areas ranging from Kuril Islands to off the coast of Kamchatka Peninsula, as well as from Aleutian Islands to the coastal areas of the Gulf of Alaska. The largest recorded specimen weighed 2.1kg, with a total length of 53cm. Its estimated age was 103 years old. In recent years, the amount of resources has continued to be stable, and over 30% of the total catch weigh around 300 to 390 grams after being dressed.

Characteristics
Pacific Cod supplied to Japan are mainly caught by longline. They are processed into Salted-Cod to be used for hot pot dishes because the process is done extremely quickly (while they are fresh, the process from drainning blood to freezing are done). The raw materials are being dressed the products for Japan are around 3 to 7lbs in weight. They are used for fish and chips in Europe and America, and for Bacalao in the Iberian Peninsula.

However in recent years, the demand from Japan has increased due to the lower price and shortage of Amarican. Most of them are shipped to China to be made into processed products and exported to Europe and America.

Characteristics
The Chub Mackerels we offer are mainly produced in Korea and Japan. Korean are caught around Jeju Island, where Liman current and Tsushima current meet and plankton thrive. The fat content becomes highest between late December to early January. We handle the whole process from procurement, selection to freezing. Every year starting July, 20 purse sein vessels depart from Jeju Island, operate in the eastern coast of Korea, and return to the port of Busan. Many other fish can be caught around the Jeju Island, including Horse Makerel, Catlass Fish, Spanish Mackerel, Yellowtail, Herring, and Rosy Seabass.

Salted Products and Boneless Canning Products.

In recent years, we have started handling Mackerels caught by Russian vessels. Currently, we cannot import them to Japan in their original form because import quota is not available. This school of mackerel is the same type as those caught along the coast of Eastern Hokkaido to Sanriku during winter.

Characteristics
Starting 2018, they are being caught by Russian super trawlers mainly in the southern part of Kuril Islands, and frozen on the vessels. It is reported that they are found in abundance, and the catch volume have continued to increase. In 2020, the catch volume reached 300,000 tons. This shoal of sardines were caught before it reached offshore Sanriku, Japan. They feed on algae during June and mid-July (adult sardines become vegetative), but by August, they begin to contain lardaceous fat content and their figure become rounded.

Scientific name: Sardinops Melanostictus
Their scientific name is the same as the sardines caught in Japan. These sardines reach offshore Sanriku via Kuril current. Their size range from 40 grams to 150 grams. The average size is 70 grams to 90 grams.

Characteristics
These Russian sockeye salmon are mainly from Ust-Kamchatsky on the eastern side of the peninsula, and Ozernaya on the southwest part of the peninsula. They are caught by Set Net around 1 kilometers from the mouth of the Kamchatka river in Ust-Kamchatsky. They are transported to the processing factory via designated transport vessels and are frozen. In western Kamchatka, they are caught in the Ozernaya river by Set Net, and processed in a Land Factory. Most of the sockeye salmon eaten in Japan are caught around the Kamchatka Peninsula.

English name: Sockeye Salmon
Scientific name: Oncorhynchus Nerka
The Sockeye Salmon caught in Ust-Kamchatsky are a bit smaller than those caught in Ozernaya. They have thin skin and tend to be younger with bright silver color. On the other hand, those caught in Ozernaya are rather large in size, and the meat is more firm. Their eggs (salmon roe) are processed into Salted Salmon Roe in local factories, and sold within Russia. The Russian word "Ikura" (the term for salmon roe in Japanese) means "fish roe". It seems that the word was introduced to Japan from Russia.

Characteristics
The factories in the Kamchatka Peninsula are skilled in handling Sockeye Salmon, which are known to be rather weak. They are processed well, so in recent years, after procurement, many are primarily processed in Southeast Asia and imported to Japan. The fishing method and processing factories used are the same as sockeye salmon. The catch volume of Fall Chum in Hokkaido (same species) have been decreasing, and for this reason, these Chum Salmon have become a major supply source. This area is an important place to procure Chum Salmon as well as Sockeye Salmon.

Scientific name: Oncorhynchus Keta
Just as Sockeye Salmon, the eggs are processed into Salted Salmon Roe in local factories, and are sold as "Ikura" (word for "fish roe" in Russian) within Russia. The most significant characteristic is its dark color of its meat. We are able to supply products with the stable meat color.

Characteristics
In recent years, the catch volume is high mainly around the Kamchatka Peninsula. It is believed that bumper fishing year comes once every year. Many eggs of these Pink Salmon are imported to Japan, and are processed into products such as Soy- sauced Roe and Salted Roe. These products are the largest supply source of all salmon roe products consumed in Japan. This is because the catch volume of Chum Salmon caught in Hokkaido have continued to drop.

English name: Pink Salmon
Scientific name: Oncorhynchus Gorbuscha
The average catch is 450,000 tons for sockeye salmon, 100,000 tons for Chum Salmon and 200,000 tons for Pink Salmon. During the bumper fishing year, the catch volume exceeds 300,000 tons. Compared to Chum and Sockeye Salmon, Pink Salmon tend to lose freshness quickly, and during seasons where catch volume is high, they tend to have soft meat. Enough inspection is needed when purchasing them.
